about FIORICHIARI

Fiorichiari is located in Tatsuruhama, Nanao City, Ishikawa Pref, surrounded by mountains and the sea.
Homegrown vegetables, seasonal wild vegetables & mushrooms from the mountains, and fish caught in the sea and processed and eaten on the spot.
Each taste and original scene that I was exposed to in my childhood remains deeply cherished in fragments of my memory.
Our family has operated the adjacent inn for many years. We have such memories as well as the spirit of hospitality for our guests.
As for myself, I have had diverse experiences in calligraphy, architecture, agriculture, and cooking.
Based on this experience, we give back to the cuisine.
We provide joy and happiness to our customers with dishes adapted to the seasons.

Chef

After studying architecture, he later became interested in cooking and worked at IKEMI, an Italian restaurant in Kanazawa.
Later, he studied under Chef Koji Kobayashi of “Fogliolina della Porta Fortuna” at his restaurant.
Returned to his hometown in Ishikawa Prefecture to gain knowledge of vegetables, and engaged in “NOTO Taka Farm”, which grows red clay vegetables on Notojima.
In August 2023, the Italian restaurant “Fiorichiari” opens in Tatsuruhama, Nanao City, Ishikawa Prefecture.
